200g plain flour
250g wholemeal flour
50g of brown sugar
300ml of buttermilk
100ml of water
100ml of Guinness
  1. Preheat the oven 400 degrees F / 200 degrees C.
  2. In a large mixing bowl combine the bicarbonate of soda, plain flour, wholemeal flour, brown sugar, buttermilk, water and Guinness. Stir until the dough comes together into a ball. If the dough seems too dry add a splash more of beer. The dough should be slightly sticky.
  3. Turn the dough out onto a floured surface and kneed into a rough ball. Use a sharp knife to score into the dough.
  4. Place the dough onto a baking tray.
  5. Bake for 40-50 minutes, until the loaf has almost doubled in size and sounds hollow when tapped. Allow to cool a few minutes, slice and serve. Bread can be reheated or used for morning toast.
